Need some help with tonight’s dinner menu? I think I’ve got just the thing for you! This stuffed bell pepper recipe is a good way to get picky eaters to chow down!
This is definitely one of my husband’s favorite dishes that I make! And for good reason, it’s flavorful, easy to make, and full of good stuff! We hope you enjoy it as much as we do! Here’s what you’ll need.
Ingredients:
- Olive oil
- Ground turkey
- Bell peppers
- Corn (canned or frozen)
- Carrot
- Zucchini
- Onion
- Garlic
- Brown rice
- Shredded cheese
- Onion powder
- Cumin
- Garlic powder
- Chili powder
- Paprika
Directions:
*Note: If you plan on cooking your brown for this recipe using a pot or rice cooker instead of any form of instant rice then I recommend you do so before starting this recipe
- Remove stems and seeds of bell peppers (you can dice the top of the bell peppers and add to the stuffing mixture or save them for another dish like fajitas, an omelet or a nice salad)
- Chop all veggies
- Preheat oven to 400 degrees
- Sautee: onion ,garlic, carrot, and ground turkey in 2 T olive oil & additional bell pepper diced up *optional
- Add seasoning
- Once turkey is fully cooked add: corn, zucchini, tomato sauce, cooked brown rice (I buy Trader Joe’s fully cooked frozen 3 minute brown rice)
- Remove pan from heat and scoop mixture into bell peppers
- Top with shredded cheese
- Add a little bit of water to the bottom of your baking pan, about 1/4 inch of water to cover the pan (this will help soften and cook your peppers while preventing them from sticking to the pan)
- Cover with aluminum foil and bake for 55 minutes at 400 degrees
- Remove foil and broil on low for 1-2 minutes
- Let cool for 15 minutes, serve an enjoy!

Beef Bouillon
Onion powder
Cumin

- Remove stems and seeds of bell peppers (you can dice the top of the bell peppers and add to the stuffing mixture or save them for another dish like fajitas, an omelet or a nice salad)
- Chop all veggies
- Preheat oven to 400 degrees
- Sauté onion garlic carrot and ground turkey in 2 T olive oil & Diced up excess bell pepper *optional
- Add seasoning
- Once turkey is fully cooked add:

- Top with shredded cheese
