So the other day I tried making the viral Green goddess salad from @BakedbyMelissa, with a few additions. I really enjoyed the dressing for the salad and thought it would be a great sauce to top off some shredded beef tostadas! Don’t let the long list of ingredients scare you, this recipe is super easy to make and my official taste tester (my husband) loved the way these shredded beef tostadas turned out. Here’s what you’ll need!
Ingredients:
- Hard shell Corn tortillas (I usually just fry store bought soft corn tortillas until crunchy in our deep fryer…and highly recommend this method instead of purchasing store bought tostadas tortillas)
- Cotija cheese
- Refried black beans (homemade or canned will do)
- Plain Greek yogurt or sour cream *optional
- Oil of choice for frying *optional if using store bought tostadas tortillas
For the Shredded Beef:
1 lb Chopped stew meat
2 cups water
1/3 cup red Wine of choice
1/3 onion
3 bay leaves
1 Tb Chili powder
2 Tb Knorr Beef bullion
3 Tb apple cider vinegar
1Tb Paprika
1 Tb Onion powder
1 Tb Garlic powder
For the dressing:
**Note worthy: I make her dressing the way her recipe calls for and add 1/2 of a Serrano pepper and 1 avocado (if you wish to omit the nuts and nutritional yeast you can)
1/4 cup Olive oil
1/4 cup chopped Chives
3-4 Green onion stalks
1 small Shallot
Handful of Spinach
Handful of Basil
1 Avocado
1/2 Serrano pepper
1 ts salt
Cashews*
Walnuts*
Nutritional yeast*
Directions:
- In a large pot with a lid add in:
1 lb Chopped stew meat
2 cups water
1/3 cup red Wine of choice
1/3 onion
3 bay leaves
1 Tb Chili powder
2 Tb Knorr Beef bouillon
3 Tb apple cider vinegar
1Tb Paprika
1 Tb Onion powder
1 Tb Garlic powder
- Bring to a boil, cover with lid, reduce heat to low and simmer for 40 minutes to 1 hour (check periodically to make sure your liquid hasn’t completely evaporated and that your meat is not sticking to bottom of the pot)
- While meat is cooking make your Green Goddess dressing by puréing in a blender:
1/4 cup Olive oil
1/4 cup chopped Chives
3-4 Green onion stalks
1 small Shallot
Handful of Spinach
Handful of Basil
1 Avocado
1/2 Serrano pepper
1 ts salt
Cashews*
Walnuts*
Nutritional yeast*
- Heat refried black beans
- Once meat is fully cooked and tender remove bay leaves from pot and shred using 2 forks
- Next fry your soft corn tortillas in oil of your choice until firm and crunchy using either a skillet or deep fryer
- Assemble your tostadas by gently spreading refried beans then top with shredded beef, GG dressing, cotija cheese and Greek yogurt or sour cream
- Serve and enjoy!
