Welcome to my kitchen! Today, I’m sharing a recipe for the most delicious potato salad you’ll ever taste. This isn’t just any potato salad—it’s the star of every cookout. You know the one, the dish that has people coming back for seconds, thirds, and asking for the recipe. Packed with creamy, tangy goodness, it’s guaranteed to be a hit at your next gathering. After all, what’s a cookout without the perfect potato salad? Just a bunch of people standing around wondering where the potato salad is! So, let’s dive into this go-to recipe and make your next cookout unforgettable. You can pick up the following ingredients at any local Walmart.
Serving size: 8-10 people, but you can double it!
Ingredients:
- 10 medium to large Potatoes of choice peeled and diced (I used gold potatoes)
- 6 hard boiled eggs
- 4 T Relish (I prefer sweet)
- 1/2 of a small yellow or white onion finely minced
- 2 T Spicy brown mustard
- 6 T Mayo
- 1 Tsp apple cider vinegar
- Seasoning to taste:
Salt
Pepper
Paprika
Dried parsley
Garlic powder
Onion Powder
- Can of black olives *optional
- Celery thinly sliced* optional
Directions:
- Set a large pot of water to boil
- Rinse & peal potatoes
- Cut into uniform cubes
- Boil until tender (about 15-20 minutes)
- Strain & allow time to cool an additional 15-20 minutes
- Place cooked potatoes in a large bowl and season with: Salt, Pepper, Paprika, Dried parsley, Garlic powder, and Onion Powder to taste
- Next combine remaining ingredients
- Taste test, and add more seasoning as needed (start off with small amounts and add more as needed…taste test frequently…you can always add, but can’t always take away!)
- Chill for 30 minutes, then serve and enjoy
