Make Ahead Breakfast Burritos

I’m sure we’ve all heard it, “ breakfast is the most important meal of the day!” And while most may agree, many don’t eat breakfast in the morning. It may be because you’re too short on time to cook a hearty breakfast, don’t want to eat the processed quick and easy sugar filled options, or because you regularly engage in intermittent fasting until after 11:30 or noon. Whatever the case these make ahead breakfast burritos are for you!


They will save you on time, money, and energy in the morning (or anytime you care to enjoy them). They are perfect for meal prep since they are portable and easily reheated. Because they are homemade with basic ingredients, you don’t have to worry about any extra additives and preservatives like what the store-bought ones come with! Simply: prepare your burritos using the recipe below, wrap in a paper towel, saran wrap, allow to cool, and then place in the freezer for up to 3 months.
This recipe should yield about 5-7 burritos, but you can easily double it!

Ingredients:

• 5-7 eggs
• 1-2 cups Shredded cheese of choice
• 1/4 cup milk of choice *optional
• 6 bacon strips cut into several pieces or 1/2 lb breakfast sausage
• 1 Red bell pepper diced
• 1/4 small onion minced
• 2-3 garlic cloves minced
• 3-4 red potatoes evenly diced
• 5-7 large flour tortillas
• Seasonings of choice ( I use: garlic salt, onion powder, cumin, and cayenne pepper. However experimenting with different spices and seasonings to figure out what YOU like best, is part of the fun of cooking!)

Additional Items you will need:
• Saran Wrap
• Paper towels or napkins
• Nonstick skillet

Directions:

Step 1: Whisk eggs and milk in a bowl and set aside
*Noteworthy: you don’t have to add any milk to your eggs, I just find that the milk makes the eggs more fluffy when scrambled

Step 2: In a skillet on medium high heat fully cook your sausage or bacon bits according to your desired texture, remove from pan and set aside

Step 3: Add diced potatoes to the remaining oil from bacon or sausage (or substitute with olive or vegetable oil if you’re omitting meat from this recipe) Sauté your potatoes on medium high heat for about 6 to 8 minutes. Potatoes should be soft on the inside and browned, but not burnt, on the edges.

Step 4: Reduce heat to medium low and add: onion, garlic, bell pepper and seasoning to taste. Sauté vegetables until tender. At this point if there is an excessive amount of oil in the pan you can drain most of it out.

Step 5: Scramble your eggs either with your vegetables together in the same skillet or separately.

Step 6: Assemble your burrito by adding a small scoop of cheese, combined sautéed veggies, and bacon or sausage to a tortilla.

Step 7: Form burrito by folding the top and bottom edges inward and then rolling one side of the tortilla to the other side

Step 8: Wrap a paper towel around your burrito, and seal with Saran Wrap. Allow to cool and then store in freezer to be enjoyed at a later time! When reheating, remove the saran wrap and microwave burrito on high for 1 to 2 minutes.

*Noteworthy: with a permanent marker write the date you prepared your burritos on the Saran Wrap. Frozen burritos, unless devoured due to their deliciousness, will last up to three months in the freezer!

Ingredients

  • 5-7 eggs

  • 1-2 cups Shredded cheese of choice or 1 slice of cheese split into 2 pieces per tortilla 

  • 1/4 cup unflavored milk of choice

  • 6 bacon strips cut into several pieces or 1/2 lb breakfast sausage

  • 1 Red bell pepper diced

  • 1/4 small onion minced

  • 2-3 garlic cloves minced

  • 2-3 red potatoes evenly diced

  • 8-10 medium tortillas or 5-7 large flour tortillas 

  • Seasonings of choice ( I use: garlic powder, seasoning salt, onion powder, cumin, and cayenne pepper. However experimenting with different spices and seasonings to figure out what YOU like best, is part of the fun of cooking!) 

  • Additional Items you will need: 
    -Parchment paper
    -Saran Wrap 
    -Nonstick skillet
    -Pot and metal strainer to steam tortillas *optional

Directions

  • Whisk eggs and milk in a bowl and set aside 
    *Noteworthy: you don’t have to add any milk to your eggs, I just find that the milk makes the eggs more fluffy when scrambled 
  • In a skillet on medium high heat fully cook your sausage or bacon bits according to your desired texture, remove from pan and set aside
  • Add diced potatoes to the remaining oil from bacon or sausage (or substitute with olive or vegetable oil if you’re omitting meat from this recipe) Sauté your potatoes on medium high heat for about 10-15minutes. Potatoes should be soft on the inside and browned, but not burnt, on the edges. 
  • Reduce heat to medium low and add: onion, garlic, bell pepper and seasoning to taste. Sauté vegetables until tender. At this point if there is an excessive amount of oil in the pan you can drain most of it out.
  • Scramble your eggs either with your vegetables together in the same skillet or separately. 
  • Place a few tortillas in a strainer & slightly steam them by placing the strainer over boiling water in a pot and cover with a lid for about 3 minutes or less. As shown below. Alternatively you can steam your tortillas by placing them in the microwave with a small cup of water for 30 seconds. Either step will make your tortillas more pliable and less likely to tear when assembling 
  • Assemble your burrito by adding a small scoop of cheese, scrambled eggs & sautéed veggies, and bacon or sausage to a tortilla as shown below
  • Form burrito by folding the top and bottom edges inward and then rolling one side of the tortilla to the other side
  • Allow to cool, then wrap your burrito with parchment paper and seal with Saran Wrap. Store in freezer to be enjoyed at a later time! We enjoy topping ours with yummy salsa! 

Notes

  • When reheating, remove the saran wrap and microwave burrito on high for 1 to 2 minutes.
