You know the routine, in the winter we need lots of great soups and hot drinks to warm us from our souls to our toes! While I love the good ol’ chicken noodle and classic clam chowder, sometimes I want more of a variety. Who doesn’t? So it’s chicken fajita soup to the rescue!
Today’s soup recipe is shaking things up a bit. With a quick broth and bold strong flavors of sautéed bell pepper you’ll be loving spoon after spoon of this chicken fajita soup!
Ingredients for the quick broth:

- Bones of 1 Costco rotisserie chicken
- 2-3 celery ribs/sticks
- 1/2 onion
- 2-3 small carrots
- 2T whole peppercorns
- 2 T apple cider vinegar
- 3 cloves of garlic
- 2 T salt
- 2 bay leaves
Ingredients for the soup:
- 2-3 carrots chopped
- Meat of Costco rotisserie chicken in chunks
- 1 red bell pepper sliced
- 1 orange bell pepper sliced
- 1/2 onion sliced
- 2 cans of great northern beans (15oz) strained
- 2 T chicken bouillon powder *optional
Suggested Toppings:
- Fresh cilantro
- Sliced avocado
- Shredded cheese
- Sour cream or full fat plain yogurt
- Sliced jalapeños
- Tortilla chips
Directions:
- Separate chicken meat from bones and set aside
- Combine all “quick broth” ingredients, bring to a boil, reduce heat, and let simmer for 1 hour
- In a skillet sauté sliced onion red and orange bell pepper (season to taste if desired, I used salt pepper and smoked paprika)
- Remove all bones and vegetables from pot using a mesh strainer and discard (you could use the carrots from the quick broth in your soup, but I find after simmering for an hour they are too mushy.)
- Add in chopped carrots, boil until tender
- Next add in chicken chunks, beans, sautéed onion and peppers
- Lastly get yourself a bowl and top with some cilantro, a dollop of yogurt, sprinkle with cheese and enjoy with some crunchy tortilla chips!
