Chopped Asian Salad

This salad is a great way to consume several raw veggies and some proteins all in one, without thinking to yourself “why couldn’t this salad be a cheeseburger or pizza?!” This recipe is a go to for me when I want to be proud of myself for “eating healthy” and actually enjoy the food too! The secret for this one is definitely in the dressing!

Another great spin on this recipe is throwing all the ingredients into a high fiber tortilla to make one delicious lunch wrap!

Ingredients:

  • 1/2 small Purple cabbage finely sliced
  • 1/2 small Green cabbage finely sliced 
  • 1 Carrot thinly slice *I slice my carrot with a potato pillar and then finely slice the strips (alternatively you can get a store bought bag of slaw with carrot, red, and green cabbage to cut down on chop time)
  • 1/2 cup sliced Green onion
  • 1 seasoned Chicken breast or 3 tenderloins cubed in uniform pieces -I use meat scissors for this step
  • 1 11oz can Mandarin oranges
  • 2 tablespoons Sesame seeds 
  • 1/2 cup chopped Cilantro 
  • 1/4 cup Sliced almonds 
  • Wontons to tastes
  • 1 tablespoon fresh minced  Ginger
  • 1/2 Cucumber **I Spiralize my cucumber & then roughly chop using this
  •  1 seasoned Chicken breast or 3 tenderloins cubed in uniform pieces *I use meat scissors for this step

Sauce Ingredients:

Honestly it’s this dressing recipe right here that really brings this salad together!

  • 1/4 cup Honey
  • 2 cloves minced Garlic 
  • 1/4 cup Olive oil 
  • 1/4 cup Rice vinegar 
  • 1/4 cup Soy sauce 
  • Juice from 1-2 limes 

Directions

  • In a small-medium skillet sauté cubed pieces of chicken & lightly season with salt & pepper to taste, set aside

In a mason jar or small bowl combine: 

  • 1/4 cup Honey
  • 2 cloves minced Garlic 
  • 1/4 cup Olive oil 
  • 1/4 cup Soy sauce 
  • 1/4 cup Rice vinegar 
  • Juice from 1-2 limes 

In a large bowl combine:

  • Green cabbage
  • Purple cabbage
  • Cucumber 
  • Carrot 
  • Green onion
  • Cilantro 
  • Ginger
  • sesame seeds
  • Almonds 

We got this beautiful large wooden bowl from Amazon! It’s perfect for serving dish companion for salads and dinner rolls!

Next gently fold in:

  • Mandarin oranges 
  • Chicken
  • Wontons 
  • Toss with dressing to taste and enjoy!  

This salad is great for meal prep because it’s made with cabbage which doesn’t wilt easily like lettuce, so it will hold up nicely for a few days after being mixed together. Just hold off on adding the wonton bits until you’re ready to eat it.

It’s the dressing! Try out this recipe for the dressing 😁

Ingredients

  • 1/2 small Purple cabbage finely sliced
