Tonight’s dinner? Tomorrow’s lunch? Looks like it’s yummy beef and broccoli stir fry for the win! This is one of my favorite MAM (make ahead meals) recipes! It’s quick and easy to make, reheats well, and I have just the tip to make it taste as good as the restaurant!
Ingredients:
- 1 lb Thin cut beef (asada)
- 2 Tb Cooking Oil
- 3 Tb Baking soda
- 3 large Broccoli crowns- cut
- 2 Carrots -shredded (I use a potato peeler for this step)
- 3 Cloves of Fresh Garlic -minced
- 1 Inch Fresh Ginger root- minced
- 3 Tb Brown sugar
- 1/4 cup Rice vinegar
- 1/4 cup Soy sauce
- 2 Tb Corn starch
- 1/2 cup water
- Pepper to taste
- Green onion*
- Sesame seeds*
- Brown or white rice
Directions:
- Lightly sprinkle baking soda on both sides of beef, let sit for 10 minutes, then rinse with cool water
**Note worthy: this process is the perfect way to tenderize your meat, preventing it from being too tough and making it more like the restaurant style beef and broccoli you may be used to!
- Cut rinsed meat into inch wide slices and sauté in a wok or large skillet with oil, garlic, and ginger, rice vinegar, beef bullion, pepper, and soy sauce on medium low heat for about 15 minutes stirring frequently
- Add in shredded carrots, broccoli, and brown sugar- stir and cover with a lid or foil to soften your broccoli to your desired tenderness (I usually prefer mine a bit firm)

- In a small bowl combine 2 Tb cornstarch and 1/2 cup water, whisk until well incorporated and pour into skillet to thicken your stir fry sauce
- Stir, remove from heat, let sit for about 5 minutes, serve and enjoy over rice!
** we like to top ours with sliced green onion and sesame seeds!
